Beer

Beer is an alcoholic beverage prepared by brewing and fermenting sugars which, due to enzymes, are formed from starch, usually sourced from various malted and unmalted cereals. Barley is most commonly used for brewing beer, but wheat, maize, rice, and millet are also used. It is considered the oldest and most popular alcoholic beverage in the world. Among all beverages, beer ranks third in terms of global consumption.

The main ingredients of beer are water, malt, hops, and yeast. Malt consists of soaked, germinated, and then dried or roasted cereal grains. During germination, amylase enzymes are formed in the grain, which break down starch into water-soluble sugars. Hops give beer its bitter flavour, while yeast causes alcoholic fermentation that produces ethanol and carbon dioxide. As ingredients (including water) vary greatly from place to place, and brewing processes also differ, the characteristics of beer (flavour, colour, alcohol content, head, etc.) vary as well.
